Summer Supper

I apologize . . . it was so good, I forgot to take a picture to post. But, I made a smashing summer pasta for dinner tonight.

I peeled and chopped up several large tomatoes from the farmers' market and tossed them in a bowl with some finely sliced shallots, steamed and chilled chopped asparagus, capers, basil, salt/pepper, and olive oil. I let it all sit for an hour or two and then tossed in about half of a fresh mozzarella. Then, topped it all with hot spaghetti noodles.

It was most yummy, seriously easy, and not much cooking at all. And, I sent a container home with our friend who joined us for dinner AND have enough left over to feed me and the Evil Side Kick for lunch tomorrow.
