I'm going to a Cinco de Mayo party tomorrow night. I lurva da mexicanish food . . . so I'm looking forward to it. I think CdM just might become one of my favorite holidays. . . since there is a theme already suggested . . . tequila!
I'm bringing a few things to the party. Green Salsa. Chicken enchiladas. Chorizo dip.
The green salsa involves roasting tomatillos, jalapenos, garlic and onions together and then whirring it all in the food processor with lime, sugar, and cilantro.
The chorizo dip is my latest crave from the local mexican restaurant . . . fried up chorizo with melting cheese melted all over it . . . spicy and cheesy.
The chicken enchiladas I put together tonight. I use canned enchilada sauce, a store roasted chicken (shredded), sauteed onions and cheese and layered it all like lasagna. Tomorrow, I'll pop it in the oven to bake.
Add some spicy chocolate mousse a friend makes and some quac and beer and we have the makings of one fine party.

Hilarious! I made chicken enchiladas suizas (with the tomatillo salsa but also cream) for our school's 5 de mayo dinner! but my green salsa was from a jar :(
