It worked. There were no trips to the ER or frantic searching for epi-pens.
The boiling down the tequila worked. I managed to reduce a cup of tequila to just over 2 teaspoons of tequila syrup. I cut my usual margarita recipe to make a quarter batch and added the reduction. This morning, while the pallet was still clean and unsullied by flavors like breakfast, the Phenom pronounced that the faux margaritas tasted just like actual ones.
My friend was more than happy . . . dare I say "overjoyed" at my creation. It had been many years since she was able to enjoy the taste of a margarita. She was impressed by the authentic flavor as well as my willingness to use a whole cup of tequila to make her a couple of drinks.
For those who haven't had my margaritas . . . here is the recipe for the real things.
3 cups sugar
3 cups water
combine in sauce pan, bring to simmer . . . stir and turn off heat as soon as the liquid become clear again. Cool.
In a gallon sized, freezer safe container, combine:
2 cups lime juice
2 cups lemon juice
2 cups tequila (I like cuervo black label)
1 cup triple sec
sugar syrup
Stir, freeze at least 24 hours.
