I will be attending a Whatever de Mayo party tomorrow. Of course, one of the chief reasons I was invited was because I make great margaritas. I understand this . . . and figure that getting invited to parties and briefly feeling popular and important is worth it.
But, one of the attendees is ALLERGIC TO BOOZE. Can you imagine? Really . . . allergic to booze.
However, I like this person and being a good, southern monkey . . . have an interest in seeing to it that she feels included. So, tonight, I'm trying my hand at non-alcoholic margaritas.
I've looked up recipes on the internet . . . and they pretty much just look like limeade. There is nothing to give you that flavor of tequila I need in margaritas.
My solution? I am simmering some tequila (with a dash of triple sec tossed in) on the stove to reduce it. I figure that if I reduce the volume, I have to be getting rid of some of the alcohol. I know . . . the cooks out there will say that merely cooking the booze gets the alcohol gone. According to the net, not so easy. I read today that you must cook or simmer booze 2.5 hours to get rid of 95% of the alcohol.
My thought is that if I reduce the tequila into a syrup, a tequila demi-glace if you will, then I can add it to the limeade for the taste of tequila with out the wretching or rashes or whatever it is she does.
I'll let you know if we end up in the ER tomorrow night.
Oh yeah, this is my 800th post. yay me.

Wow...and I thought I was bad for eating 13 year old military rations just to see what they tasted like. But you're playing spin the (tequila) bottle with your friend's allegries. Here's to margaritas, EpiPens, and trips to the ER!
