Mushroom topper

The other day, in utter boredom and the need to clean crap outta the frig, I made up a new topping for baked taters. Well, I imagine that I'm not the first on to prepare this exact recipe, and I imagine I'm not the first one to think of putting it on baked potatoes. But, it was a first for me and that counts.

I sliced up a whole container of fresh button mushrooms. I melted about three tablespoons of butter (unsalted) and probably 1 -2 tablespoons of olive oil (gotta add the oil to keep the butter from burning.) I tossed in a large grated garlic clove, two sprigs of thyme from the garden, and the sliced mushrooms. I seasoned with a bit of kosher salt and fresh ground black pepper. I sauteed for a few minutes and then poured it all over two baked potatoes for dinner for me and the Phenom.

IT WAS DELICIOUS! The Phenom regards baked potatoes as an excuse for eating massive amounts of butter -- but I found no reason to add extra butter to my potato. Frankly, butter, garlic, and mushrooms were made for each other.
