Sweet, Pink

I love a kitchen gadget. I like just knowing I have it and COULD use it, should I want or need it. Even if it sits in the china cabinet for 3 years. Like the candy thermometer I bought several years ago while on an outing with a girl friend. I liked the idea of it. Tonight, it got its first use. I made pink grapefruit gum drops.

In the picture, there is one that has not been rolled in sugar so you can see how pretty and jewel like it is.

I had several super big grapefruits in the fruit bowl, a packet of pectin leftover from the blackberry jam making frenzy of summer, and a candy thermometer that was feeling unloved.

They have both the juice and the zest of a grapefruit. There was a bit of coordinating the boiling juice/pectin pot and the napalm boiling sugar/corn syrup pot.

The final product has a perfect chewy sweet texture with a subtle taste of grapefruit. And, they're pink . . . which will be perfect for my Monkey Tea Party on Valentine's Day.
