So, I celebrated my thankfulness of the beef industry for Thanksgiving. I'm also going off the grid for Christmas meals. Due to monkey wrenches being thrown towards my holiday plans, this year, we are going for low key and home bound. (And because some asshat scheduled a meeting for immediately after Christmas, making holiday travels more difficult still. grrrrr)
Anyway, our old friend WS Random is joining us for the day before Christmas eve. I often go fancy-smancy on her. This year, I'm mixing things up a bit with something new . . . pizza. Not ordered/delivered pizza, but real pizza. I'll be mixing up the dough tonight for a slow, cold rise overnight. I have installed a baking stone in my oven. We have fresh motz and basil. I'm hoping for a crisp crust and that deep mmmmm that comes from cheese and basil. For dessert, THE BROWNIES topped with vanilla bean ice cream, homemade hot fudge sauce, and crushed up candy canes for a festive flair.
For Christmas eve, we are planning to nibble and watch our favorite Christmas movies. So, I have a champagne pate, cheeses and fruit, artichoke heart bruschetta, cream cheese/hot pepper jelly. I've got a bag of oranges and a bag of tangerines which I'll juice and we'll have a pitcher of mimosas with our nibbles.
For Christmas, I plan to spend the day playing with my new tortilla press. For dinner, I'm making carnitas. We'll top them with pickled onions, quac, sour cream, jalapenos, and roasted tomato/chipotle salsa. I'll have drunken beans on the side. I haven't figured out a dessert . . . but we'll be drinking frozen margaritas all day.
