It hasn't snowed in the swamp yet. They say it will. The sun was out this morning, but it has disappeared. I will believe it when I see it.
But, we've already had a couple of rounds of frozen drinks (Phenom received a frozen concoction maker for his giftie) and a pumpkin pie is cooling on the counter and the carnitas are in the oven.
One of the items I'll be putting out to top our carnitas is pickled onion. I was thinking that the spicy/sweet crunch would be a nice counter to the meat. And, they are insanely easy to make.
Bring to a boil 3/4 cup red wine vinegar, 2 TBLS sugar, 1/2 tsp salt, 1/4 tsp red pepper flake and 2 bay leaves. Toss in one red onion, halved and sliced thin. Boil a minute and remove from heat. Using tongs, put the onion slices in a glass jar, and top with remaining liquid (you won't use all the liquid). Cool, stash in frig and top beans, meat, sandwiches, etc with them.
