This has become the typical, mid-week meal for us this summer. I've become the darling of the Wednesday morning farmer's market. Each week, loading up a bag full of yummy fresh veg. I love the farmer's market. The food is cheaper and of much higher quality than anything in the supermarket. And, it's fun to chat up the farmers. Also, our local farmer's market will accept food stamps and WIC vouchers. Mothers! and Children! Eating the best food the region has to offer! How could you go wrong?
Anyway, this meal is insanely easy. I serve it with buttered potatoes. Sometimes, if I have the foresight to boil the potatoes the night before, I throw them into the skillet.
This week featured banana peppers (roasted under the broiler and peeled, seeded, and chopped), purple onion, okra, and yellow squash. Any variation of veg you like works.
I toss everything into the skillet with a good sized knob of butter and some olive oil, salt/pepper and Tony Chachere's Creole Seasoning. Sometimes I put in a spoonful of creole mustard.
Lately, I've been getting the best okra and have been tossing it into pretty much everything I make. And, bonus . . . Peg can be distracted with an okra stem.

Looks utterly delish -- why can't I find decent looking okra -- am I just too picky and demanding?
I get the best okra from an organic farmer who comes to our local tailgate farmer's market. It is sooooo fresh and the most tender okra I've found.
