Spinach Pesto

I'm usually totally worthless on Friday Nights. In school, I even learned to not have dates on Friday nights because I just didn't have the patience for the games.

On the way home from work today, I buzzed through Cook-Out and got Phenom his favorite milkshake (chocolate malt). But, this meant he was too full for supper. So, I futzed around the kitchen and dumped some leftover stuff into the food processor and it wasn't half bad.

I found some brazil nuts in the freezer (the last of the nuts left over from last Christmas' liquor loaf experiments) and dropped a handful into the work bowl with a couple smallish cloves of garlic. I whirred them up. Then, I dumped in the rest of the grated parm from Monday night's spaghetti and meatballs, perhaps 1/3 a cup. And I filled the work bowl up with spinach. Whirred again and then drizzled in some olive oil. I don't know how much because I never measure . . . but enough to make it more paste than sauce.

I tossed it with a bit of curly noodles (with a tablespoon or so of the pasta water). I didn't salt the pesto, but the pasta water was salty. It was yummy.
