Lunch

A friend was given less than a month to move out of the house she's been renting for the last 15 years. Something about being in a flood zone and unable to get insurance and the owners deciding to move the family manse to another county. (yes, load the HOUSE on a truck and drive it 50 miles east. crazy)

Being that she is an unencumbered human, we agreed to help her move today. (It sounded perfectly harmless before the humidity kicked in.) Today, it is 145 degrees outside with 187% humidity.

She asked me to make lunch for the movers. We're talking a dainty picnic, right? Above is a picture of what I've got. . . and I'll pick up some bbq on my way over. The brown and green stuff is tabbouleh. It has lots of parsley, mint, cucumbers, and green onions. I recently bought a large bottle of a nice fruity olive oil and now Giada has nothing on me. So, generous slogs of olive oil and the juice of a lemon. The other salad is caprese . . . I bought lovely, rich, knee-buckling tomatoes at the farmers' market this morning. The basil is from my garden . . . and again with the olive oil.
I also got some cantaloupe and have resisted the urge to put mint on it too . . . the tabbouleh is pretty minty already. And, yes, the blueberries were mounded up when I bought them . . . I needed breakfast.
