What's for Dinner?

Ever think to yourself? What could I fix for dinner that would be both delicious and a heart attack waiting to happen? That question actually comes up frequently at Casa del Bongo. Tonight, we are having the most delicious heart attack meal. (This is all in preparation for the Phenom's birthday this week. Because the Phenom has a performance on the actual birthday, the celebration has been extended to last the week.)

Cincinnati Chili. YUM.

It is one of the stranger meals you'll cook . . . and frankly you'll wonder if the directions are correct.

Here is the spice mix you'll need:

1 tsp garlic powder
1 TBLS chili powder
1 tsp ground allspice
1 tsp ground cinnamon
1 tsp ground cumin
1 tsp dry mustard
1/2 tsp ground red pepper
1/2 tsp (I generally use a full tsp) salt
1 1/2 TBLS unsweetened cocoa

In a large pot, mix together 1 1/2 - 2 lbs extra lean ground beef, 4 cups water, 1 can tomato paste, 1 tablespoon worcestershire sauce, and the spice mix. Bring to a boil and drop to a simmer. Simmer, UNCOVERED, for 1 1/2 hours.

Serve this chili on top of cooked spaghetti noodles. Top with any or all of the following you like:

cheddar cheese
kidney beans
chopped sweet onion
oyster crackers
