Curses, Foiled Again

So, yesterday I was cruising along on the good ship Mojito when I decided that some drunken blogging was just the thing. I wrote TWO drunken entries . . . and blogger jumped up on down on them and refused to post. Damn it.

Now, I'm sober. sigh. And, I've been in preparations for a company meal all day. Here's the menu:

Hot Jalapeno Crab dip with crackers and crostini
Edamame

Mixed baby greens/herb salad with balsamic vinaigrette
Garlic toasts
Chicken Piccata

Raspberry Fool

I'm on a crusade to never buy bottled salad dressing again. So here's the dressing recipe . . . keeping in mind I don't actually measure.

One chopped shallot, salt and pepper
a teaspoon or so of honey (or honey jelly . . . if you have an evil side kick who provides you with such tasty things)
tablespoonish dijon mustard
2 tablespoonishes of balsamic vinegar
Whisk in olive oil . . . eh, about 1/2 a cup maybe less . . . taste it as you go along to see if you get to the balance of vinegar/oil you like. I tend to like more vinegary dressings

And, I think I've posted it before, but here's the raspberry fool. It is a great dessert because you can use frozen berries and only need to buy whipping cream the day you want to make it.

1 bag frozen raspberries
1/2 cup sugar

put in a pan on med. heat, cook until all the berries are totally broken down. Strain to get the liquids without the seeds. Cool in the frig for a couple of hours.

Whip cream (I use an entire pint container) until stiff peaks . . . fold the raspberry syrup into the cream. Don't worry if you have streaks of darker pink . . . it'll be tasty. Chill for several hours before serving. Sometimes I like to gild the Lily and layer it with chocolate mousse . . . but tonight, I'm serving it from the Phenom's mother's crystal trifle dish.

Oh yeah . . . the good ship Mojito will be docking here again tonight!
