Not always my fault

The Phenom, and others, like to tease me that I'm incapable of preparing a meal for a small group. Specifically, I've been accused of expecting the Red Army to show up, hungry, right at dinner time. I will admit that I do get carried way when making salads. I have this beautiful, large maple salad bowl and I just have to fill it up when I make a salad.

Tonight, I made a chicken and rice casserole from a cook book. I've made the quickie, soup can version before and it was terrible. This was a real cooking feat . . . bechamel sauce and fresh veggies and everything. I followed the recipe EXACTLY. (well, maybe I was a tad heavy handed with the garlic . . . but a yankee wrote the recipe and they just don't have the tastebuds of southerners or monkeys.)

The recipe said the whole mess would fit in a 9X13 dish. HA! I used the largest casserole dish I own . . . and had to put the extra in a pie plate. Now, I have an enormous amount of chicken and rice casserole . . . and an extra. And Phenom doesn't do left overs. And, there is no way to "reinvent" a casserole to trick the Phenom into thinking it's new. I'm culinarily screwed. AND IT ISN'T MY FAULT . . . I followed the instructions.

Which just goes to prove the guiding principle of my life . . . always disregard the instructions.

It was tasty . . . I think the meat needed independent seasoning and actually, I thought the carrots could have been better. I'm thinking about what veg I could include other than carrots. And, truth be told, I liked it better licking the spoon before it went into the oven than after it came out.
