Butt Delivery System - check

I've been craving a bit of butt lately. BBQ Butt, that is. It has been at least 9 months, if not longer, since I've cooked up a butt.

I bought two butts today. At sams club, that's how they package them. Plus, I have a professor friend who adores my butts.

I prep them the night before by rubbing them all over with the southern dry rub you can find in the Joy of Cooking. Then, they get wrapped up in saran wrap for the night. Tomorrow, I'll take them out of the frig for a few minutes before I brown them - and put them in the oven for a long slow roast.

Because I have two butts, (can you tell I just love saying "butt"? -- no, really.) I am going to try an experiment. I'm going to line a cheapo roasting pan with a couple layers of foil - add a few drops of liquid smoke, and then cover them with more foil. Then, the whole contraption is going on a half sheet pan and into the oven. I think I'll poke a hole or two for venting.

Tomorrow night, I'll spend a good amount of time whacking up the butt with a cleaver - and then package for giving away, freezing, and Monday night dinner.
