Fast Tortilla Soup

I made this the other night - and the Phenom, a self declared soup hater ate it up.

2 cups cooked, shredded chicken
1 quart chicken broth
2 green onions, chopped
1 largish clove garlic, finely chopped
1 jalapeno, chopped
1 cup frozen corn
1-2 chopped roma tomatoes
salt/pepper to taste
1/2 tsp ground coriander
2 tsp olive oil
Tortilla Chips

saute the onions, jalapeno, and garlic in oil over med heat - making sure NOT to burn the garlic. When the veg is soft, add in broth, chicken, and seasonings. Bring to a boil, then drop the temp to low. Let simmer a couple of minutes - Add corn and tomatoes right before you serve it. Garnish with several smashed tortillas.

You can also garnish with fresh avocado, if you have it. Yum.
