Festive Pancakes

Last night, I mucked about with my pancake recipe and made "ginger bread" pancakes. They actually were tasty.

I think I've given my pancake recipe before - but here it is

1 1/4 cups self rising flour
1/2 tsp baking soda
2 tbls sugar (I used turbinado sugar which is brown table sugar)
1 egg
1 cup buttermilk
3 tbls butter, melted

1/2 tsp ground ginger
1/2 tsp cinnamon
1/8 tsp cloves
1/8 tsp allspice

You can add more spice according to your tastes. This gave a nice flavor without overwhelming.

Whisk all the dry ingredients and spices together in large bowl

whisk egg and buttermilk together, and add in and mix the hot butter.

Add wet ingredients to dry and mix well.

I add a bit more butter milk - maybe 1/4 cup - to thin the batter just a little bit for thinner pancakes.


I served them with homemade applesauce and maple syrup, bacon, and mimosas.
