Holiday Cookin'

The only foods obtained road side this holiday were melons. Watermelon and cantaloupe. The pork tenderloins were found in the meat section of the local grocery -- not on the side of the road "serve yourself" style.

But, here is a typical southern favorite salad. It maybe the perfect southern food. Savory, sweet, tangy, crunchy, chewy.

Ingredients:

Salad:

Couple bunches Broccoli or one bunch broccoli and one head cauliflower, cut into bite sized bits

One medium or 1/2 large red onion, diced small

8 Slices bacon, fried crispy, crumbled

1-2 handfuls golden raisins

Dressing:

1/2 cup mayo
1/3 cup sugar or splenda
3 tbls cider vinegar


Whisk the mayo and sugar/splenda. Whisk in vinegar, one tablespoon at a time (if you try to whisk in all the vinegar at once, you'll break the mayo and it won't ever work)

Mix the broccoli or broccoli/cauliflower with diced onion, toss with all the dressing. Put in frig for 3-4 hours minimum.

Just before serving, mix in bacon and raisins.

This salad is a good one for picnics or family gatherings. The vinegar content raises the acid level of the dressing to the point where you won't have the danger of bacteria growing as you would with straight mayo. You can use the fat free mayo and splenda to make it even less horrid for your figure.

No one thinks a fat monkey is cute. Fat monkeys don't get invited to star in big budget films. Neither do monkeys who are too smart for their own good, but that's another issue entirely.
