Tonight, I had a regular meeting of the executives. After killing a couple of trees copying off reports and projections. I made a treat. I find that reading of financial reports some how goes easier when there is cake.
Tonight, as I do every April when this meeting rolls around, I featured local, fresh strawberries. This time, it was strawberry shortcake.
And, it is the only time I use boxed cake mix. Ever.
Use the Duncan Hines butter cake. I don't like the taste of oil in my cake, so I like this for the butter. I butter and sugar my cake pans . . . it gives the edges a crispy, sweetness you don't get with flour.
I drove out to a local strawberry farm this morning and got a bucket of fresh from the fields strawberries (boy did they smell good). I sliced them and sprinkled just a tiny bit of sugar mixed with a touch of powdered vanilla. Then, made whipped cream just before the meeting.
Between the cake and the fresh strawberries and the real whipped cream . . . they ate two whole cakes and a whole bucket of berries and a quart of cream. It was a very productive meeting.
