Everyone in the Pot Broccoli Cheese Soup

I can't remember if I've posted this one before or not. Oh well. It's not like I've never repeated myself. Plus, it's cold outside, and this will warm you up.

In a large soup pot, put:

3-4 yukon gold potatoes, peeled and diced
2-3 carrots, peeled and sliced
1 med. onion, chopped
2-3 ribs celery, chopped
1 1/2 qts broth (chicken if you eat the little creatures, veg if you don't)
1 tsp salt, generous grinds of black pepper

Bring to a boil, drop to a slightly less vigorous boil, cover . . . cook about 20 minutes.

Add a bag each of frozen broccoli and cauliflower florets. Return the boil, reduce and cook about 10 minutes.

Add 1-2 cans cream of celery soup and 1/2- 1 lb velveeta cheese, cubed . . . and I like to add the white meat from a store bought roasted chicken . . . cook until cheese is melted.

This is a great soup for feeding a crowd on the cheap. Also, you can toss in the veggies left over from a holiday feast and turkey if you like. You can make it totally veggie if you swing that way.
