Tonight, we feasted. I don't normally go in for things like meatloaf . . . but partly because it just seems gross to have my hands in a big bowl of raw meat. But, I actually make very good meat loaf (I use half pork sausage and half ground chuck).
Since tonight is the night we regularly host a cast member for dinner, I made a big meatloaf last night. To serve it, I sliced it about 3/4 - 1 inch thick, and pan fried it in a touch of olive oil. It gives it a nice crisp edge to each slice and is an easy way to rewarm it.
Along side, I made a big pot of polenta. The Phenom, being southern by birth, loves grits and always forget, until it shows up on the plate, that polenta is just fancified grits. Of course, being southern by nurturing, I get my polenta nice and buttery. I also had a side of sauteed spinach.
I took about 4-5 oz of the good bacon from the butcher's counter and cut it into 1/2 pieces and fried it up until crispy. I removed the bacon to drain/cool. In the resulting fat, I tossed in about 2 cloves of well chopped up garlic and about 30 seconds later threw in a whole tub of organic, baby spinach. I tossed it about until the spinach was pretty much wilted and removed it from the heat. When I plated it, I sprinkled the crisp bacon over the polenta and spinach.
If we don't die of heart attacks by morning, it will go down as one of my better meals.
