So, the Phenom totally whiffed on the whole crew party and told me it would be this weekend. You know how I just love to plan out what I'm going to cook. Since the date I was given was a Saturday, I had decided to make a big, huge veggie platter with homemade honey mustard in a hollowed out purple cabbage. I was undecided as to what sort of sweet to bring. Then, I learned that the party is actually next Friday. A Friday. That gives me much less time to fuss with a dish.
The Phenom has requested that I make Jerk Pork Tenderloins. That's easy enough . . . they are cheap, easy to cook, and the jerk seasoning is great. I can trim up the tenderloins on Thursday night and cook them quickly Friday after work. I might even have time to make some mango salsa . . . if I can remember what all I usually put in mango salsa.
But, this evening, I realized I'm going to see an old friend on Tuesday. I would like to bring her a little treat . . . so I'm going to make a batch of pickled onions. But, I also want to make some peppermint choco bark.
Here's what you do:
Line a baking sheet with parchment paper.
In two double boilers (tempered glass bowls over but not touching simmering water) melt 12 oz each of white chocolate and dark chocolate. Add several drops of peppermint oil (NOT extract) to the dark chocolate and several well crunched up candy canes into the white chocolate.
Run each chocolate in two lines down the parchment paper. . . alternating them . . . then, take a chopstick and swirl the chocolates together. Allow to cool in the frig and break up. It's pretty and refreshing and people will think you're a genius.
