In a large wooden bowl, put 6-8 oz raw baby spinach and 8 oz sliced mushrooms.
In a large skillet, heat 3 tablespoons bacon fat. Saute 1/2 a red onion, chopped. Add in 1 tsp sugar, pinch or two of salt, and several grinds of black pepper and then 3 tablespoons of cider vinegar. Remove from heat, pour over spinach, and toss well. Don't breathe in too deeply during this process. Trust me on this.
Top salad with hard boiled egg, crumbled bacon, orange slices, garlicky croutons, and cold roasted chicken breast (from the grocery store).
Even the Phenom devoured it and the Phenom is a terribly picky eater.
