Summer is coming . . .

which means I get to start whipping out the limes and all recipes containing lime. You didn't know that monkeys have a deep love of limes, did you?

This weekend, we've been invited to a "first warm weekend of the year" party and I'm thinking of bringing a key lime pie. mmmmmm key lime pie.

It is seriously seriously easy.


You will need:

store bought graham cracker crust
1 can (14 oz) sweetened, condensed milk
3 egg yolks
1/2 cup key lime juice (fresh or from a bottle)

blend the liquid ingredients until combined, pour into crust and bake 15 minutes at 350 degrees.

Cool and freeze. Top with fresh or canned whipped cream and slices of lime.

Just the thing to cool off a hot night or after a spicy meal.
