Call Me a Fool

This weekend - we celebrated a very dear person's birthday. You know me - any excuse to party! And this person's birthday is a prime excuse.

I made a smashing dessert of layered raspberry and chocolate mousse. Well, the raspberry was actually a "fool."

According to Bill Neal's Southern Cooking - a fool is a traditional southern type dessert - and for a very long time was the basis for ice cream - and egg custards for ice cream were only rarely used until the modern age. It was toe curling yummy and insanely easy.

Raspberry Fool

1/2 cup sugar
2 cups raspberries
1 1/4 cups whipping cream.

over medium heat, cook the raspberries and sugar together briefly til the raspberries break down. Strain all the seeds out - and chill syrup. Whip cream to stiff peaks, and then add at first a small amount into the raspberry syrup. It should take 2-3 additions to get all the whipped cream into the syrup. Chill completely before serving. Great raspberry flavor - creamy and yummy.

And all your human friends will be sooooooo very impressed.
