It was a dark and stormy night . . .

Which means it is the perfect excuse for Pancakes for Supper!!!!

I make great pancakes. I use the Old Woman's recipe. It's very easy - and miles better than any mix you can buy.

This recipe easily doubles


Buttermilk Pancakes:

1 1/4 cups self rising flour
1/2 tsp baking soda
2 tbls sugar (I use "sugar in the raw" or turbinado sugar)
1 egg
1 cup (plus) buttermilk
3 tbls melted butter

Mix all the dry ingredients together. Whisk 1 cup buttermilk and egg together, add hot, melted butter and whisk -- the butter will form little "flakes" when it hits the cold liquids - you want this.

Add the wet ingredients into the dry and mix quickly. Do not over mix. It is okay to have a few little lumps.

I like to add a bit of extra buttermilk to thin out the batter just the tiniest bit. I would say about two more tablespoons -- but you don't have to.

Also, I like to let the batter sit for a few minutes -- you'll see a few little bubbles form - this is good.

This is also a great batter for waffles.

I serve pancakes with warmed real maple syrup. And LOTS of crisp BACON.
